
Quick Pickled Zucchini
This is a very simple recipe for pickled zucchini. When prepared this way, the zucchini retains its beneficial properties and acquires a new unusual taste. Such a light snack
will never fail to catch your attention and will always be a hit.
To pickle zucchini, we will need:
Zucchini – 1 kg
Fresh green dill (you can never have too much)
Garlic – 4-5 cloves
Liquid honey – 2 tablespoons
Vegetable oil – 100 ml
Apple cider vinegar – 2-3 tbsp.
Black ground pepper – 1 tsp.
Salt to taste.
Preparation sequence:
Wash the zucchini well. Use a special knife to cut them into long thin strips. If you don’t have the right knife, you can cut them into thin circles.
Place them in a deep bowl and sprinkle with salt. Let the juice drain.
While the zucchini is releasing juice, prepare the marinade. In a bowl, mix the oil, honey, and vinegar, press the garlic through a press, and add the pepper.
Add the marinade, finely chopped herbs to the zucchini, and mix everything very carefully.
Cover the bowl and place it in the refrigerator. The zucchini snack will be ready in 2-3 hours. But if you leave it in the fridge overnight, the zucchini will be even tastier and more tender.
