Lightly Pickled Cucumbers

Summer is in full swing! When, if not now, to prepare delicious summer snacks?

Preparing lightly salted cucumbers is a quick process and won’t take much time. However, your table will feature delicious lightly salted cucumbers.

Before you start cooking, it’s essential to remember some points:

  • to keep the lightly salted cucumbers crunchy, they should be soaked in cold water. This will increase the salting time but will keep the cucumbers crunchy.
  • you can also add dill sprigs and umbrellas to the brine. It all depends on the salting method and taste. For quick salting, fresh dill is suitable, while for hot brine, umbrellas work better as they give off their aroma more in hot liquid.

The simplest and quickest method is cucumbers “shakers”.

Cut off the tops of the cucumbers, slice each into several pieces, place them in a tight bag or plastic container, add salt and spices, seal tightly, and shake vigorously. Place in the refrigerator. The sliced cucumbers release juice, and the salting process happens faster. After 2-3 hours, your lightly salted cucumbers are ready to be served.

Lightly salted cucumbers with horseradish.

Wash the cucumbers thoroughly. In a container, place currant leaves, garlic, peppercorns, dill, and a few pieces of horseradish root. Arrange the cucumbers and pour warm brine over them. They need to be kept under pressure. The cucumbers will be ready in 1-2 days.

Lightly salted cucumbers with mineral water.

They always turn out very crunchy! Wash the cucumbers and place them in a pot or jar. Add dill, garlic, peppercorns, and salt. Pour mineral water over them until the cucumbers are covered. Put in the refrigerator. The lightly salted cucumbers are ready to eat after a day.

Spicy lightly salted cucumbers.

Wash the cucumbers, place them in a pot. Add garlic, dill, and a hot pepper pod. Pour warm brine over them. They can be served after a day.
